I don't have experience with the Dell 30", but assuming you're just trying to push that many pixels (that's a LOT of screen real estate!) I can say this... An ATI Radeon x1900 Pro drives the Apple Conema 30" display quite nicely. I've played with 4 of them installed in a Mac Pro, and G3.5 performs great.
It's strange, I actually get better performance with G3.5 spread across 4 monitors (using the 4 video cards) than I do with 3 monitors turned off and G3.5 flying fullscreen on one monitor.
